Main objective
The NewFood4Thought project has as main objective the development of nutraceutical products, that may contribute to the prevention of cognitive decline associated with aging or other serious pathologies (such as Alzheimer’s disease).
Specific objectives
- Deepen knowledge about chub mackerel and quinoa.
- Study the bioaccessibility of key nutrients (DHA, vitamins B9 and B12 and Se).
- Undertake in vitro assays to assess the effect of key nutrients on neuronal cells.
- Evaluate through in vivo tests the neuroprotective potential of a novel nutraceutic food.
- In silico evaluation of the benefits associated with the consumption of chub mackerel, quinoa and the novel nutraceutic food.
